Apparently the models are broken in version 1.20.1, here is a sample [Legacy attachment omitted] in 1.20.2 if it works [Legacy attachment omitted]

This seems to be a viaversion problem. Can you tell me your viaversion / viabackwards version, and try updating them as well?

So have you tried updating it? I know the release version on spigot wasn't working and you need dev builds for it.
